A savory French-inspired dish featuring pan-fried chicken thighs and potatoes, seasoned with rosemary and white wine.

Instructions

  1. 1

Prepare all ingredients, ensuring the chicken thigh is boneless.

  2. 2

Pierce the chicken thigh with a fork and rub it with a clove of raw garlic.

  3. 3

Season the chicken with 0.5 tsp white pepper, 0.5 tsp black pepper, and 1 tsp salt.

  4. 4

Wash the potatoes and cut them into thick strips. Slice 2 cloves of garlic.

  5. 5

Heat olive oil in a pan and place the chicken skin-side down. Cook on low heat.

  6. 6

Fry until the skin is golden brown, then flip the chicken.

  7. 7

Add potatoes, garlic, and rosemary to the pan. Continue frying, flipping the potatoes and pressing the chicken with a fork.

  8. 8

Cook until done. Remove excess oil with kitchen paper if necessary.

  9. 9

Increase heat to medium-high and pour in white wine. ⚠️ Caution: Flames may rise.

  10. 10

Once the wine evaporates, add 0.5 tsp salt and 0.5 tsp white pepper. Shake the pan to coat evenly.

  11. 11

Slice the chicken and serve with potatoes. Garnish with fresh rosemary.

  12. 12

Serve with red wine and enjoy the crispy and tender chicken.
