Slice the eggplant into rounds and sprinkle each slice with a pinch of salt. Let it sit for 25 minutes until water beads on the surface.

Pat the eggplant slices dry with kitchen paper.

Heat a little olive oil in a pan over medium heat and fry the eggplant slices until golden brown on both sides.

Transfer the fried eggplant slices to a baking dish.

In the same pan, add a bit more olive oil and sauté the garlic until fragrant.
