Prepare all ingredients.

Use a pasteurized egg for safety, especially if you prefer a runny yolk.

Slice the onion and carrot into thin strips.

Mix the sauce: 1 tbsp light soy sauce, 0.5 tbsp dark soy sauce, 1 tbsp cooking wine, 1 tbsp oyster sauce, 1 tsp sugar, 1 tsp cornstarch, a pinch of salt, 120 ml water, and a pinch of black pepper.

Melt butter in a pan for added flavor.

Sauté the onion and carrot until soft.

Add the beef slices and stir-fry until they change color. If preferred, blanch the beef first.

Once the beef is cooked, add the sauce and stir until thickened. Set aside.
