Finely chop half an onion for the patty and grate the other half for the sauce.

Melt a small piece of butter in a pan, sauté the chopped onion until soft, then mix with flour and let cool.

Mix bread crumbs with milk. Combine beef and pork with salt, nutmeg, and black pepper. Add the sautéed onion, egg, and milk-soaked bread crumbs. Mix clockwise until sticky.

Oil your hands, shape the mixture into patties, flatten slightly, place on baking paper, and refrigerate.

Heat oil in a pan, cook patties for 1.5 minutes on each side on medium heat. Reduce to low, cover, and cook for 5 minutes. Turn off heat and let sit for 2 minutes.

Remove patties. If there's excess oil, pour it out. Add sake to the pan, bring to a boil, then add grated onion, garlic paste, soy sauce, ketchup, mirin, vinegar, and water. Simmer for 2 minutes until thickened. Add black pepper and butter.
