    Boil a pot of water, blanch the spinach until tender, then remove.

    Rinse the spinach in cold water to remove any bitterness.

    Squeeze out excess water from the spinach.

    Mix 1 tbsp Japanese soy sauce, 1 tbsp mirin, 5g sugar, and 2 tbsp pure water in a bowl.
