A refreshing and tangy appetizer, perfect as a snack or side dish, featuring cherry tomatoes pickled with preserved plums and lemon juice.

Instructions

  1. 1

Wash the cherry tomatoes and remove the stems.

  2. 2

Boil a pot of water, reduce to low heat, and blanch the tomatoes for a few seconds until some skins burst.

  3. 3

    Peel the tomatoes.

  4. 4

Use preserved plums, one pack can be used twice.

  5. 5

    Add rock sugar.

  6. 6

Pour about 250ml of water into the pot, enough to cover the tomatoes. Boil for 3 minutes after it starts boiling, then let it cool.

  7. 7

After cooling, place the tomatoes, the plum water, and the plums into a container.

  8. 8

Add lemon juice, if you have a lemon, you can add the juice of half a lemon.

  9. 9

Cover with a lid or plastic wrap, and refrigerate. It's best to let it sit overnight or for a good part of the day for the flavors to fully infuse into the tomatoes.
