Clean lemon skins with salt, zest them avoiding the white part to prevent bitterness. Soak gelatin sheets in cold water to soften.

Whisk egg yolks with fine sugar until fluffy and slightly pale.

Combine lemon zest and milk in a pot, bring to a boil then turn off the heat and let it steep for 5 minutes.

Strain the milk and gradually mix it into the egg yolk mixture, stirring continuously.

Pour the mixture back into the pot, optionally with the lemon zest, and cook over low heat until slightly thickened. Immediately turn off the heat to avoid curdling.
