Cook the sago pearls: Bring water to a boil, add sago pearls, and boil for 5 minutes. Turn off the heat, cover, and let it sit for 7-8 minutes. Drain and rinse with cold water.

Repeat the cooking process: Boil the semi-cooked sago pearls again for 5 minutes, then cover and let it sit for 15-20 minutes until fully transparent.

Prepare the mango: Peel and cut a large mango into chunks. Reserve some for garnish.

Prepare the pomelo: Peel and separate the pomelo into small grains. Use about 1/5 of the fruit for 3 servings.
