A delightful dessert featuring sweet mango, creamy coconut milk, and soft black glutinous rice, topped with vanilla ice cream.

Instructions

  1. 1

Soak the black glutinous rice in water for 3 hours, then drain. Steam the rice for 40 minutes with a little water above the rice level.

  2. 2

Freeze the milk beforehand. Use any brand of milk; skim milk is used here for a lighter taste. Use half the amount of coconut milk for a pure flavor. Vanilla ice cream is recommended for a closer taste to the original.

  3. 3

After steaming, mix the rice with 2 tbsp of sugar and let it cool naturally to form rice balls easily.

  4. 4

Cut the frozen milk into four pieces and mix with coconut milk.

  5. 5

Add 6-8 scoops (about 100g) of vanilla ice cream into a blender. Pulse 1-2 times to achieve a chunky texture.

  6. 6

Take a spoonful of cooled rice, shape it into a ball with wet hands to prevent sticking. Place two balls per serving.

  7. 7

Pour the blended milk and ice cream mixture over the rice balls and top with sliced mango.
