    Remove the stems from the mushrooms and cut into quarters.

    Debone the chicken thighs and cut the meat into chunks.

    Slice the green onion diagonally.

    Dice the ginger.

    Dice the garlic.

    Marinate the chicken: Add a pinch of white pepper, 1 tsp salt, 1 tsp chicken powder, 2 tsp sugar, 1 tsp starch, 1 tbsp cooking wine, 1 tbsp oyster sauce, and 1 tbsp light soy sauce. Mix well, then add 1 tbsp peanut oil to seal in the flavors. Marinate for 15 minutes.

    Heat oil in a wok and fry the chicken until golden brown on both sides. Add ginger and garlic and stir-fry until fragrant.
