A refreshing cold lemon tea recipe that perfect for summer time! Using fresh lemon, black tea, and a hint of sugar syrup. Give a try on this Hong Kong Style iced lemon tea other than balm lemon tea.

Prepare the lemon by scrubbing its skin with salt to remove wax, rinse, and make 8-10 cuts without severing it. Squeeze out 13.5g of lemon juice and set aside in a cup.

Boil water and steep 5g of black tea leaves in 65ml of hot water for 9 minutes.

While the tea is steeping, prepare the ice water by placing 125g of ice cubes in a measuring cup and adding cold water up to the 300ml mark. Stir well.

Mix 50ml of hot water with 30g of powdered sugar and the squeezed lemon juice. After the tea has steeped, filter out the tea leaves and add the tea to the lemon mixture. Stir until the sugar is completely dissolved.

Combine the lemon tea mixture with the ice water from step 3 and stir until most of the ice has melted.

Place the squeezed lemon into a serving cup, add 10ml of sugar syrup (optional), and pour the prepared lemon tea over it.
