Mix all dough ingredients except butter until a thick film forms, then add butter and knead to the expansion stage. Cover with plastic wrap and let ferment until doubled in size.

Take out the fermented dough, gently pat to expel air, divide into six equal parts, roll into balls, cover with plastic wrap, and let rest for 15 minutes.

Expel air again, shape, roll in cornmeal, place in molds, cover, and let ferment until doubled in size.

Preheat oven to 190°C and bake for 15 minutes.

Let cool, then slice in half and fill with pork patty and fried egg.
