Prepare all ingredients as listed.

Peel the pumpkin and cut into finger-sized strips.

Boil water in a pot, add 1/3 tbsp of salt, and blanch the pumpkin strips for 30 seconds after boiling.

Cool the pumpkin in cold water and drain.

Coat the pumpkin strips with starch in two batches, using about 1 tbsp each time.

Heat oil in a wok to 70% hot (about 180°C) and fry the pumpkin for 2 minutes. Remove and drain.

In another pan, heat a little oil, add salted egg yolks and 1/3 tbsp of sugar, stir until the yolks bubble.
