A comforting and healthy Japanese miso soup with tofu and seaweed, perfect for a light dinner or breakfast.

Prepare ingredients: Cut tofu into 2cm cubes, slice green onion into small pieces, and prepare dashi stock by boiling water with a handful of bonito flakes (vegetable stock or plain water can also be used).

Strain the bonito flakes, pour the dashi stock into a pot and bring to a boil. Add the tofu and cook for 2 minutes.

Slowly dissolve the miso paste using a spoon (a sieve is better for this process). Do not directly add the miso paste into the pot.

Once the miso is completely dissolved and the soup boils again, add the dried wakame. Bring to a boil, then simmer for 3 minutes. Add a teaspoon of mirin to balance the flavors.

Before serving, add the chopped green onion and sesame seeds.
