A tangy and spicy Chinese dish featuring crispy lotus root slices, perfect as a side or appetizer.

Boil water in a pot, peel and slice the lotus root, rinse off the surface starch with water, blanch the lotus root slices in boiling water for 1 minute, then remove and soak in cold water.

Slice the green onion into rings, mince the garlic, and slice the red and green chili peppers into rings.

Heat a wok until dry, add cooking oil as needed, heat the oil and sauté the green onion, garlic, and red chili peppers until fragrant, then add the lotus root slices and green chili pepper rings.

Add 1 tbsp light soy sauce, 0.5 tbsp oyster sauce, 1 tbsp mushroom seasoning, and 0.5 tbsp sugar.

Stir-fry until the lotus root slices are evenly colored, drizzle 0.5 tbsp vinegar around the edge of the wok and continue to stir-fry evenly.
