A homemade spicy chicken burger that rivals fast food, featuring a crispy chicken thigh and a soft homemade bun.

Instructions

  1. 1

Debone the chicken thighs with scissors and marinate with the listed ingredients for 10 minutes. Then add an egg and mix well.

  2. 2

Prepare the coating: mix starch, glutinous rice flour, and flour in a 1:1:2 ratio. Use as needed, adding more if necessary.

  3. 3

Coat the chicken once with the dry mixture, then dip in liquid, and coat again with the dry mixture.

  4. 4

Heat oil in a pan and fry the chicken over medium-low heat. Alternatively, bake in an oven.

  5. 5

For the burger buns, mix all ingredients except butter and peanut oil. Knead the dough, adding peanut oil as needed to prevent sticking.

  6. 6

Add a little butter and continue kneading.

  7. 7

Knead until a simple glove film forms.

  8. 8

Divide into six portions, let ferment in the oven at 40°C for 20 minutes. Brush with egg wash, sprinkle sesame seeds, and bake at 175°C for 18 minutes.

  9. 9

Assemble the burger with salad dressing.
