Prepare the sauce by mixing light soy sauce, oyster sauce, sugar, and cornstarch in a bowl. Set aside.

Bring a pot of water to boil, add a pinch of salt and 1 tbsp vegetable oil. Blanch the bok choy for 1-2 minutes until tender, then drain and set aside.
