Mix 500g of high-gluten flour with 250g of warm water to form a dough. Cover and let it rest while preparing the filling.

In a bowl, combine 250g of ground pork with 1 tbsp cooking wine, 3 tbsp light soy sauce, 2 tbsp oyster sauce, a pinch of chopped green onions and ginger, 4g salt, and 1 tbsp sesame oil. Add 30g of vegetable oil to enhance the texture.

Chop soaked dried shiitake mushrooms into fine pieces.

Scramble 4 eggs in a pan until just set, then remove from heat.

Finely chop a small bunch of chives (about 50g).

Mince soaked wood ear mushrooms.
