Cut the eggplant into chunks, sprinkle with a pinch of salt, mix well, and let sit for 30 minutes. Then rinse and squeeze out excess water.

Sprinkle starch over the eggplant and mix well.

Cut the green and chili peppers into pieces and set aside.

In a bowl, mix starch, light soy sauce, dark soy sauce, vegan oyster sauce, sugar, a pinch of salt, and water to make the sauce.
